garlic and cheese soup















So I had a ton of garlic in the house and I really needed something to do with it. I found this at smittenkitchen.com and I was well wondering how it was going to taste. You might think that 30 some garlic cloves is a bit much in a soup, but it isn't. This soup turned out really really good ! And garlic is super good for your body. One problem, don't plan on kissing your hunny after this since the main parts of the soup are not only garlic but also onion as well. It will make your mouth all garlic for the rest of the day.

Roasted Garlic Soup with Parmesan Cheese

26 garlic cloves (unpeeled)
2 tablespoons olive oil
2 tablespoons (1/4 stick) butter
2 1/4 cups sliced onions
1 1/2 teaspoons chopped fresh thyme
18 garlic cloves, peeled
3 1/2 cups chicken stock or canned low-salt chicken broth
1/2 cup whipping cream
1/2 cup finely grated Parmesan cheese (about 2 ounces)
4 lemon wedges

Preheat oven to 350°F. Place 26 garlic cloves in small glass baking dish. Add 2 tablespoons olive oil and sprinkle with salt and pepper; toss to coat. Cover baking dish tightly with foil and bake until garlic is golden brown and tender, about 45 minutes. Cool. Squeeze garlic between fingertips to release cloves. Transfer cloves to small bowl.

Melt butter in heavy large saucepan over medium-high heat. Add onions and thyme and cook until onions are translucent, about 6 minutes. Add roasted garlic and 18 raw garlic cloves and cook 3 minutes. Add chicken stock; cover and simmer until garlic is very tender, about 20 minutes. Working in batches, purae soup in blender until smooth. Return soup to saucepan; add cream and bring to simmer. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate. Rewarm over medium heat, stirring occasionally.)
Divide grated cheese among 4 bowls and ladle soup over. Squeeze juice of 1 lemon wedge into each bowl and serve.

Serves 4.

tomato soup day !




So today I made a home made tomato soup ! I got the basics down from a website but them modded it up a lot with my own favors ! I'm telling you this is the best of a snow in day !

Here's the basic recipe-

-1-3 cans of whole tomatoes
-1 big yellow onion, diced
-4-5 cloves of garlic, diced
-olive oil
-salt & pepper
-pesto
-milk (whole is best)
-a table spoon of honey
- 1/4 cup of sugar
- dash of basil, garlic, tomato spice ( mrs. dash makes this )


Dice the onion and garlic and saute it in olive oil. Then after 10 minutes, add the canned tomatoes, sugar, spices, pesto and cover with water if needed, and bring to a boil. Then reduce to a simmer, cover, and keep it on low heat for about 20-45 minutes. Puree it with a stick blender (or throw it in the blender) and add enough milk to make it a nice light red color, probably about 1 cup or so. Season with a little honey and stir that right in there.

I make this in big batches and freeze it for a latter date ! I also like to add some parmesan cheese on top , it gets all melty and good !

To make the bread, just get a hard bread and slice it. I like to had garlic salt and Parmesan cheese to it before baking it. Bake in the over for about 10-15 at 300 degrees, or until toasted.
